Recipe of the Month: Red, White, and Berry Icebox Cake

 

This delicious no-bake dessert is perfect for your 4th of July celebrations. Easy to make and refreshing to eat, it’s a family favorite that everyone will love.

 

Ingredients:

  • 2 cups heavy whipping cream

  • 1/2 cup powdered sugar

  • 1 tsp vanilla extract

  • 1 box graham crackers

  • 2 cups sliced strawberries

  • 2 cups blueberries

  • 2 cups raspberries

Instructions:

  1. In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.

  2. Spread a thin layer of whipped cream on the bottom of a 9x13 inch dish.

  3. Place a layer of graham crackers on top of the whipped cream.

  4. Spread a third of the whipped cream over the graham crackers.

  5. Top with a third of the berries.

  6. Repeat layers two more times, ending with berries on top.

  7. Cover and refrigerate for at least 4 hours or overnight.

  8. Serve chilled and enjoy!
