Recipe of the Month: Red, White, and Berry Icebox Cake
This delicious no-bake dessert is perfect for your 4th of July celebrations. Easy to make and refreshing to eat, it’s a family favorite that everyone will love.
Ingredients:
2 cups heavy whipping cream
1/2 cup powdered sugar
1 tsp vanilla extract
1 box graham crackers
2 cups sliced strawberries
2 cups blueberries
2 cups raspberries
Instructions:
In a large bowl, whip the heavy cream, powdered sugar, and vanilla extract until stiff peaks form.
Spread a thin layer of whipped cream on the bottom of a 9x13 inch dish.
Place a layer of graham crackers on top of the whipped cream.
Spread a third of the whipped cream over the graham crackers.
Top with a third of the berries.
Repeat layers two more times, ending with berries on top.
Cover and refrigerate for at least 4 hours or overnight.
Serve chilled and enjoy!
